I’m sure most of you use Twitter, and so do I! I haven’t merged my blog with Twitter because my Twitter account isn’t food specific. Sometimes I talk about food but sometimes I talk about TV or traffic or other stuff in my life. But, I want to follow more people on Twitter, and I’d love to have more followers myself! I think it’ll inspire me to tweet more, if I know that people are reading what I’m saying.

No time for a long post but I have a ton of pictures on my camera, so here goes!

The lovely Stephanie at Dr. McDougall’s Right Foods was kind enough to send me a case of these awesome, tasty, healthy boxes of soups to try. I brought the Lentil one to work last week and had it for lunch and dinner (each box has about 2 servings).

So so so good! Dr. McDougall’s Ready to Serve Vegan Soups are the first carton soups with chunky ingredients, and it almost tasted homemade. Can’t wait to try the others — chunky tomato, black bean, vegetable, roasted pepper tomato, minestrone and split pea.

When I had the soup for dinner, I ate this alongside – bread with Athenos hummus and sliced tomatoes. So warm and delicious, really feels like “fall” food.

I think this was dinner a week or so ago…my fiance made a delicious pasta full of veggies, chicken, and tortellini, which I ate with bread and a salad of greens, tomatoes, and balsamic vinegar. Oh, and Bolthouse Farms Green Goodness.

I doctored up this Lean Cuisine Santa Fe Rice and Beans meal with some Wholly Salsa (Kroger had a great deal last week on these. They were buy one, get one free, and we found some on manager’s special for $1.49 each, so $1.49 for 2 salsas!) and tortilla chips.

Another great bargain at the grocery store is rotisserie chicken. I got a small one at Kroger for $4.99, and we ate off of it for a few days, plus I used the chicken carcass to make homemade stock (I took how to photos but will save that for another post). I ate the chicken here on bread with hummus, avocado, and tomato.

I ate some more of the chicken with avocado, tomatoes, greens and hummus as a salad.

And I’ve also been eating a steady diet of apple sauce, raisin bread and Krema peanut butter.

So, that’s what I’ve been eating. I wish I had more time to post frequently, but like I said in my last post, my life is crazy busy with the wedding less than 30 days away!

…and reading all of your blogs! Just haven’t had time to post lately. Work is keeping me super busy, and I have less than a month until my wedding! So, if posts are sporadic, please forgive me. Once my life slows down a bit in the next month, I’ll be back in full effect!


I’m no doctor, and I don’t have much medical expertise, but I can say with a degree of certainty that my subject line is true. I’ve been sick all week (upper respiratory infection and sore throat/cough), but the pineapple upside down cake I made today was the perfect medicine.

Ta-da! It might look like it was really complicated to bake, but I have a super easy recipe…well, more like a method. I melted about half a stick of butter with some light brown sugar and a little bit of Captain Morgan’s pineapple rum and coated the bottom of the pan with that, adding the pineapple rings and cherries. Then, I made a regular yellow cake mix as directed, substituting apple sauce for vegetable oil and pineapple juice for water. The cake mix went on top of the rest of the stuff in the pan, and I baked for about 20 minutes. Then, after letting it cool, I flipped the cake over and voila! So moist (I think because of the apple sauce) and so tasty.

PB&J oats! Plus banana. I used Justin’s Honey Almond Butter, some strawberry preserves, and a splash of Almond Breeze.

This was an assortment of things — some leftover white beans, mixed veggies, the last little bit of Melissa’s polenta and sweet corn, along with some fried shrimp and crab balls my fiance got at The Fish Place (no kidding, that’s the name of this restaurant).

Cafe Express is one of my “go to” places for quick, tasty, higher end fast food. This is their delicious veggie sandwich, which comes with hummus, roasted tomatoes, spinach, pickled carrots and onions, and fennel, on ciabatta bread. I got sweet potato fries with it. So so so good!

For lunch today (and the leftovers will probably be lunch tomorrow), I had the Kashi Roasted Vegetable Thin Crust Pizza. Oh wow, this is a tasty, healthy way to get your pizza fix.

Back to work tomorrow and then it’s a Halloween weekend! Fun! I’ve got a costume; if I end up wearing it, perhaps I will post photos here!

 


I’ve been trying to pinch pennies on food expenses in the past couple weeks because all my wedding bills are adding up. I raided the pantry earlier this week and made a big batch of purple rice I bought awhile ago from Whole Foods, adding a bag of frozen mixed veggies and lentils.

I also used it as a side to one of my work lunches this week. This is a Morningstar Farms veggie patty and the very last of my Sonny & Joe’s hummus on a sandwich thin. Oh, and more mixed veggies (including chickpeas!) as a second side. This meal was veggie-licious.

And today, I had this yummy lunch — purple rice and veggies with crockpot white beans. I found a bag of navy beans in my pantry and put them in the crockpot last night to cook with water, red onion, bell pepper, spinach, sage, thyme, oregano, and some other spices. Awesome!

Unfortunately, not all my meals this week were so well-planned. On Wednesday, I had a full morning and afternoon and only ate an apple until about 3 p.m., when I had…

Subway

Subway! It wasn’t too expensive, thankfully. Six-inch turkey sub on wheat with pepper jack cheese, red onion, lettuce, tomato, banana pepper, salt and pepper, oil and vinegar. Also had sour cream and onion Baked Lays and a Fuze sweet tea.

Blueberry Chobani! I’ve decided I love you. I thought I loved your friend Strawberry Chobani best, but you’ve got delicious chunks of blueberries mixed in with thick, creamy Greek yogurt, and there is nothing wrong with that. At all.

I bought a box of Golden Corn VitaTops a long time ago and stuck ‘em in the freezer. I forgot about them until I started scavenging for food this week and decided to give them a try. Oh. my.goodness. Only 100 calories, and it’s a sweet, delicious recreation of cornbread. I can’t wait to try the chocolate-y VitaTops.

Banana and coffee was breakfast #2 today. So satisfying. That was a huge banana, btw.

This blurry photo does not illustrate the deliciousness of the concoction I made in my blender on Monday. I can’t recall everything I put in there, but I do remember using frozen banana (so that creamy “soft serve” gave my smoothie a really great consistency), Almond Breeze, frozen berries, plain Chobani, and AmazingGrass Berry Green Super Food. It was an instant pick-me-up that got rid of the migraine that had been plaguing me all day!

And I love using plain Chobani as a background element in recipes. What’s your favorite recipe using plain Chobani (or Greek yogurt)?

One more question, keeping with the theme of my eating-for-cheap post – What are your “go to” foods if you want to eat well but not spend a lot?

I snacked on this homemade trail mix at work on Friday — it’s raw, unsalted almonds, chocolate chips, peanut butter chips, cranberries and raisins. Sweet and salty, all at once! I also tried the third flavor of Amazing Grass bars that I was sent — berry whole food energy bar — which was a great complement to the trail mix and gave me a little boost of energy.

Here’s another work snack/breakfast from last week. Shari from Chobani was nice enough to send me some coupons to try their yogurt (even though I’ve already made it known that I”m a fan :) , so I got this creamy, delicious strawberry yogurt and topped it with some black grapes.

Stats on Strawberry Chobani:
Calories – 140 (from fat – 0)
Total fat – 0g
Sugars – 19g
Protein – 14g

I love this Greek yogurt — it’s 0 percent fat, made with hormone-free milk and a great source of protein. I only wish my local Whole Foods had more flavors! In addition to the strawberry, I got blueberry and plain, which is one I have yet to try.

I also snacked on this (sorry for the blurry pic) — the elusive PB&J Larabar! I LOVE the peanut butter cookie version of the bar, and this took that bar’s flavor and combined with the Cherry Pie Larabar to make a bar that tastes just like a peanut butter and jelly sandwich. The best part? It’s only 4 ingredients — dates, peanuts, unsweetened cherries and salt.

We had free food at work on Thursday and Friday! Here’s what I had on Friday — a really tasty tortilla salad with black beans, corn and tortilla strips, along with some delicious penne pasta, spinach and feta cheese. For dessert, we had peach cobbler. I told myself I was being healthier by skipping the crust and just going with the filling. :)

On Friday night, my brother’s fiance (now wife!) took all the bridesmaids out for dinner at Macaroni Grill. I ordered the “make your own pasta” and selected whole wheat penne, pomodoro sauce, brocolli, mushrooms and grape tomatoes, topped with parmesan cheese. It was yummy.

After the wedding on Saturday (it was an afternoon ceremony and reception), Michael and I went home for a nap and woke up just in time for dinner! We went to Campo Azul, and instead of going with the usual chicken tacos that I always get, I ended up with cheese quesadillas, rice and beans. I wasn’t super hungry, so I just ate one of the quesadillas and saved the rest to eat for lunch/dinner today (and posting the pic reminded me that they’re in the fridge, so I guess it’s time to eat now!).

I’m so happy that it’s fall — truly my favorite season! But the weather in Houston hasn’t been very fall-esque this week. I tried to trick Mother Nature into thinking it was fall by making soup. This is my variation on Rachael Ray’s “Why the Chicken Crossed the Road Santa Fe-tastic Chicken Tortilla Soup” — I followed the method by changed up the ingredients to include what I had on hand (red, yellow and green bell peppers, no cilantro) and to use different seasonings (chili powder, dried oregano, cumin). It was delicious and super spicy (use less or no chipotle in adobo if you don’t like heat). On the top, you’ll see how it looked the night I made it for dinner, with sour cream, cheese, tortilla strips and red onion as toppers, and on the bottom is what I ate for lunch the next day (no toppings). Yum.

Here’s what I had for breakfast on Monday (I think). Pumpkin oats (which you can’t really see), with almond milk and topped with Eden Foods Wild Berry Mix. Again, trying to eat “fall” foods even though the weather isn’t really fall around here. :)

My trip to Whole Foods today didn’t just net me a Salad Mess; I also got a free chocolate from the cashier! Score! I ate that and some Naked Green Machine on my way back to work from the store.

Free food at work today! Even though I’d bought a salad for lunch, I had this for dinner, which was great because I had to stay late at work. I don’t know where this was ordered from, but it was tasty — pita, hummus, orzo salad and a chicken wrap with avocado and black bean. And, um, some dessert. :)

This isn’t food, but I wanted to share the photos from my wedding hair and makeup trial, which was last night. I never ever really do my hair (it’s naturally straight) or wear makeup, so this was fun, to see myself like this. On the top is what the wedding-day hair/makeup will be, and on the bottom is my hair when I got home and took the pins 0ut.

Busy weekend! My brother is getting married on Saturday, and I’m a bridesmaid!


Something is wrong with my camera phone. None of my phone pics are uploading to Snapfish, so even though I’ve been photographing my eats, I can’t share them with you. I’ll have to start using my regular camera and get over being inconspicuous!

    Wow, I have had a tough week, which is perhaps why I haven’t posted since Monday. Life got in the way of blogging, and I didn’t get a chance to photograph all my eats.

    But, I did photograph some things that I wanted to share! I’ve discovered the amazingness that is Amazing Grass, thanks to a generous sampling of their products from Teri Jo, who works at the company. (For some reason, my camera phone pics aren’t uploading, so no pic for now.) I’ve been making green monsters (although they’re not technically green) and drinking them for breakfast and giving my fiance a thermos-full for breakfast, too. Delicious, filling and healthy. And I LOVE the bars! When my pictures are available, I’ll give you a more detailed review.
